Enology Services Lab - Winter Update

Harvest 2010 was an excellent year for quality wines in NC.

The Enology Services Lab at ASU has performed over 1500 analyses, worked with over 25 wineries and will continue to assist all NC wineries in the pursuit of improving the quality of NC wines.

It is time to look at cold stabilities, heat stabilities, VA and sulfur levels for all 2010 wines including your pre- and post-blending trials in preparation for bottling.

Be sure to check malate and residual sugar levels in all wines as well. These are two of the most important analyses prior to aging and bottling.

Many wineries have both white and red wines in barrel and must be diligent with topping and other oxygen management practices. It is time to monitor storage conditions including O2, SO2 , VA, and sensory analysis of all wines in the cellar. SEE BELOW FOR SAMPLE SHIPPING INSTRUCTIONS.

Shipping Wine Samples

Send 500-750 ml in clean, sealed container with minimal headspace.  Glass wine bottles should be package in wine shipper or equivalent protection.  Plastic bottles (e.g. single use water bottles) are acceptable; rinse bottles with wine before filling to eliminate any dilution of samples.
